Abstract

The objective of the research was to evaluate the water use rates needed for slaughtering cattle in Bahia, evaluating 19 projects, 9 fridges and 10 slaughterhouses, that requested environmental permit for operation of these industries in INEMA in the period 2006-2012. Data were obtained in environmental licensing processes, concerning the operations stage, which in this case covers the operating licenses, unified and simplified. The average consumption rate of water in the fridges was lower than that obtained in slaughterhouses. Analyzing individually, it appears that 75% of these enterprises do not have indexes compatible with the best technologies that are adopted for cattle slaughter. In the case of slaughterhouses the scenario is even worse, reaching this index to 87.5%. Associating the carrying water consumption, it was found that the larger the slaughterhouses and fridges, the lower the spending on water.
